- 1 cup white chocolate chips
- 1/4 cup heavy cream
- 1/2 cup crushed graham crackers or additional freeze-dried strawberries (for coating)
Instructions
- Prepare the Strawberry Powder: Place freeze-dried strawberries in a food processor and pulse until they form a fine powder. Set aside 2 tablespoons for coating.
- Melt the Chocolate: In a heatproof bowl, combine white chocolate chips and heavy cream. Microwave in 20-second intervals, stirring between each, until the chocolate is fully melted and smooth. Stir in the strawberry powder until well combined. Chill the mixture in the refrigerator for 1–2 hours, or until firm enough to scoop.
- Form the Truffles: Using a small spoon or cookie scoop, roll the chilled mixture into balls. Roll each truffle in the crushed graham crackers or reserved strawberry powder to coat. Place on a parchment-lined tray and refrigerate until ready to serve.
