Potatoes:

Green Beans:
- 1 pound fresh green beans, trimmed
- 2 tablespoons olive oil
- 1 packet (1 oz) ranch seasoning mix

- 4 slices bacon, cooked and crumbled (optional)
- 1 tablespoon chopped fresh parsley, for garnish
Instructions
- Preheat the Oven: Preheat the oven to 400°F (200°C).
- Prepare Potatoes: Place halved baby potatoes on a baking sheet, drizzle with olive oil, ranch seasoning, garlic powder, salt, and pepper. Roast for 15 minutes.
- Blanch Green Beans: Blanch green beans in boiling water for 3–4 minutes, drain, and rinse with cold water.
- Roast Together: Add green beans to the baking sheet with potatoes. Drizzle with olive oil and ranch seasoning. Toss to combine. Roast for another 15–20 minutes.
- Finish and Serve: Top with crumbled bacon, if using, and garnish with parsley before serving warm.
Notes
- You can use frozen green beans, just thaw and pat dry before roasting.
- For a vegetarian version, skip the bacon or use plant-based bacon.
