For the Buffalo Chicken Filling:

  • 2 cups cooked chicken, shredded
  • 1/2 cup buffalo wing sauce
  • 1 cup shredded mozzarella or cheddar cheese
  • 1/2 cup cream cheese, softened
  • 2 green onions, sliced

For Assembly:

  • 12 egg roll wrappers
  • Olive oil spray
  • Ranch or blue cheese dressing for dipping

Instructions

  1. Prepare the Buffalo Chicken Filling: In a medium bowl, mix the shredded chicken with buffalo sauce, mozzarella, cream cheese, and green onions until well combined.
  2. Assemble the Egg Rolls: Lay out an egg roll wrapper with one corner facing you. Spoon about 2 tablespoons of the filling near the center. Fold the bottom corner up over the filling, then fold in the sides, and roll tightly, sealing the edge with a dab of water. Repeat with the remaining wrappers.
  3. Cook in the Air Fryer: Preheat the air fryer to 375°F (190°C). Lightly spray the egg rolls with olive oil spray and place in a single layer in the air fryer basket, working in batches if needed. Cook for 8 to 10 minutes, turning halfway, until golden brown and crispy.
  4. Serve: Serve hot with ranch or blue cheese dressing for dipping.
