For the Buffalo Chicken Filling:
- 2 cups cooked chicken, shredded
- 1/2 cup buffalo wing sauce
- 1 cup shredded mozzarella or cheddar cheese
- 1/2 cup cream cheese, softened
- 2 green onions, sliced
For Assembly:
- 12 egg roll wrappers
- Olive oil spray
- Ranch or blue cheese dressing for dipping
Instructions
- Prepare the Buffalo Chicken Filling: In a medium bowl, mix the shredded chicken with buffalo sauce, mozzarella, cream cheese, and green onions until well combined.
- Assemble the Egg Rolls: Lay out an egg roll wrapper with one corner facing you. Spoon about 2 tablespoons of the filling near the center. Fold the bottom corner up over the filling, then fold in the sides, and roll tightly, sealing the edge with a dab of water. Repeat with the remaining wrappers.
- Cook in the Air Fryer: Preheat the air fryer to 375°F (190°C). Lightly spray the egg rolls with olive oil spray and place in a single layer in the air fryer basket, working in batches if needed. Cook for 8 to 10 minutes, turning halfway, until golden brown and crispy.
- Serve: Serve hot with ranch or blue cheese dressing for dipping.
Notes
- These egg rolls can be assembled ahead of time and frozen; cook from frozen, adding 3 to 4 minutes to the cooking time.
