Main Cake:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon

- 1/4 teaspoon salt
- 2 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup finely grated carrots
- 1/4 cup crushed pineapple (drained)
- 1/4 cup chopped walnuts or pecans (optional)
Cream Cheese Frosting:
- 4 oz cream cheese (softened)
- 2 tablespoons unsalted butter (softened)
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- Prepare the Cake: Grease and line a 6-inch round or square baking pan that fits your air fryer.
- Combine Wet Ingredients: In another bowl, beat the eggs, oil, and vanilla extract until well combined. Stir in the grated carrots and crushed pineapple.
- Mix Batter: Gradually mix the wet ingredients into the dry until just combined. Fold in nuts if using. Pour the batter into the prepared pan and smooth the top.
- Bake: Place the pan in the air fryer and bake at 320°F (160°C) for 25–30 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely before frosting.
- Prepare the Frosting: Beat the cream cheese and butter until smooth. Add the powdered sugar and vanilla, and mix until fluffy.
- Frost the Cake: Spread the frosting over the cooled cake and slice to serve.
