Cream Cheese Frosting:

  • 4 oz cream cheese (softened)
  • 2 tablespoons unsalted butter (softened)
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the Cake: Grease and line a 6-inch round or square baking pan that fits your air fryer.
  2. In a medium bowl, whisk together the flour, sugars, baking powder, baking soda, cinnamon, nutmeg, and salt.

  3. Combine Wet Ingredients: In another bowl, beat the eggs, oil, and vanilla extract until well combined. Stir in the grated carrots and crushed pineapple.
  4. Mix Batter: Gradually mix the wet ingredients into the dry until just combined. Fold in nuts if using. Pour the batter into the prepared pan and smooth the top.
  5. Bake: Place the pan in the air fryer and bake at 320°F (160°C) for 25–30 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely before frosting.
