Description

Crispy and flavorful Air Fryer Zucchini Fries make a perfect healthy snack or side dish. These zucchini sticks are coated in a seasoned breadcrumb and Parmesan mixture, then air fried to golden perfection with minimal oil for a guilt-free treat.

Ingredients

Scale

Zucchini Fries

  • 2 medium zucchini
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 cup Panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 2 teaspoons garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Olive oil spray

Instructions

  1. Prepare the zucchini: Trim the zucchini ends and cut them into ½-inch thick sticks, ensuring they are similar in size for even cooking.
  2. Set up coating stations: Arrange three shallow dishes. In the first, place the flour. In the second, beat the eggs. In the third, combine the Panko breadcrumbs, grated Parmesan cheese, Italian seasoning, garlic powder, salt, and black pepper.
  3. Coat the zucchini sticks: Dip each zucchini stick first in the flour, shaking off excess. Then dip it into the beaten eggs, and finally roll it in the breadcrumb mixture, pressing gently to ensure the coating adheres well.
  4. Arrange in air fryer: Place the coated zucchini sticks in a single layer inside the air fryer basket. Lightly spray them with olive oil to help achieve a crispy texture.
  5. Air fry: Cook the zucchini fries at 400°F (200°C) for 10 to 12 minutes, or until they are golden brown and crispy. Flip halfway through cooking for even crispiness if needed.
  6. Serve: Remove from the air fryer and serve immediately with your favorite dipping sauce, such as marinara or ranch dressing.

Notes

  • Ensure zucchini sticks are cut evenly to cook uniformly.
  • Do not overcrowd the air fryer basket; cook in batches if necessary for best crispiness.
  • Use fresh grated Parmesan for best flavor and binding in the breadcrumb coating.
  • For a gluten-free version, substitute all-purpose flour and Panko breadcrumbs with gluten-free alternatives.
  • Serve zucchini fries hot for the best texture.
