Base Ingredients
- 1/2 cup unsalted butter
- 1 cup almond flour
- 1/2 cup powdered sugar
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- 4 large egg whites
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon almond extract
Toppings and Finishing
- 1/2 cup fresh raspberries
- 2 tablespoons sliced almonds
- Extra butter for greasing the pan
- Extra powdered sugar for dusting
Instructions
- Prepare the Oven and Pan: Preheat the oven to 375°F (190°C) and lightly grease a financier or mini muffin pan with butter to ensure the cakes don’t stick.
- Brown the Butter: In a small saucepan over medium heat, melt the unsalted butter and continue cooking until it turns golden brown and emits a nutty aroma. Remove from heat and allow it to cool slightly.
- Mix Dry Ingredients: In a mixing bowl, whisk together the almond flour, powdered sugar, all-purpose flour, and salt until well combined.
- Beat Egg Whites and Add Extracts: In a separate bowl, lightly beat the egg whites just until foamy. Stir in the vanilla and almond extracts gently.
- Combine Ingredients: Gradually mix the dry ingredient mixture into the egg whites, stirring until the batter is smooth and uniform.
- Add Browned Butter: Slowly pour the cooled browned butter into the batter, mixing continuously until fully incorporated and the batter is silky.
- Fill the Pan: Spoon the batter into the prepared pan cavities, filling each about three-quarters full for proper rise.
- Add Toppings: Press a few fresh raspberries gently into the top of each financier, then sprinkle with sliced almonds for extra texture and flavor.
- Bake: Place the pan in the oven and bake for 15 to 18 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
- Cool and Dust: Allow the financiers to cool in the pan for several minutes before transferring them to a wire rack. Once cooled, dust the tops lightly with powdered sugar before serving.
Notes
- Be careful not to overmix the batter to preserve the light and tender texture of the financiers.
- Fresh raspberries can be substituted with other berries such as blueberries or blackberries depending on preference.
- Using browned butter adds a rich, nutty flavor that is essential to authentic financiers.
- If you don’t have a financier pan, mini muffin pans work well as an alternative.
