  • 1 ½ cups fresh or frozen cranberries (halved if large)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and prepare a 12-cup muffin tin with liners or grease.
  2. Mix dry ingredients: In a large bowl, combine flour, sugar, baking powder, baking soda, salt, and orange zest.
  3. Mix wet ingredients: In a separate bowl, whisk together orange juice, oil, egg, and vanilla.
  4. Combine: Pour wet ingredients into dry, stir gently until just combined. Fold in cranberries.
  5. Bake: Divide batter into muffin cups, bake for 18–22 minutes until a toothpick comes out clean.
