Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and prepare a 12-cup muffin tin with liners or grease.
- Mix dry ingredients: In a large bowl, combine flour, sugar, baking powder, baking soda, salt, and orange zest.
- Mix wet ingredients: In a separate bowl, whisk together orange juice, oil, egg, and vanilla.
- Combine: Pour wet ingredients into dry, stir gently until just combined. Fold in cranberries.
- Bake: Divide batter into muffin cups, bake for 18–22 minutes until a toothpick comes out clean.
- Cool: Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- If using frozen cranberries, no need to thaw them.
- For added sweetness, sprinkle coarse sugar on top before baking.
