  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup breadcrumbs (plain or panko)
  • 2 large eggs, lightly beaten
  • 2 green onions, finely chopped
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika (optional)
  • olive oil spray

Instructions

  1. Preheat Oven: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly spray with olive oil.
  2. Prepare Broccoli: Steam or microwave chopped broccoli for 2-3 minutes until just tender. Drain and pat dry.
  3. Mix Ingredients: In a bowl, combine broccoli, cheeses, breadcrumbs, eggs, green onions, garlic, salt, pepper, and smoked paprika (if using). Mix well.
  4. Shape Balls: Form mixture into small balls and place on baking sheet. Lightly spray with olive oil.
