Broccoli Cheese Balls:
- 2 cups fresh broccoli florets, finely chopped
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 cup breadcrumbs (plain or panko)
- 2 large eggs, lightly beaten
- 2 green onions, finely chopped
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon smoked paprika (optional)

Instructions
- Preheat Oven: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly spray with olive oil.
- Prepare Broccoli: Steam or microwave chopped broccoli for 2-3 minutes until just tender. Drain and pat dry.
- Mix Ingredients: In a bowl, combine broccoli, cheeses, breadcrumbs, eggs, green onions, garlic, salt, pepper, and smoked paprika (if using). Mix well.
- Shape Balls: Form mixture into small balls and place on baking sheet. Lightly spray with olive oil.
- Bake: Bake for 20-25 minutes, turning once, until golden and crisp. Serve warm.
