Marinade:

  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Chicken:

  • 1 1/2 pounds boneless, skinless chicken breasts or thighs

Instructions

  1. In a medium bowl, whisk together balsamic vinegar, olive oil, honey, Dijon mustard, garlic, oregano, salt, and pepper until well combined.
  2. Place the chicken in a large resealable plastic bag or shallow dish and pour the marinade over the top. Seal or cover and refrigerate for at least 30 minutes, preferably 2–4 hours for best flavor.
  3. Remove the chicken from the marinade and let any excess drip off. Grill, bake, or pan-sear the chicken until fully cooked and juices run clear (internal temperature should reach 165°F/74°C).
  4. Let rest for 5 minutes before slicing and serving.
