Ingredients
Scale
Marinade and Steak
- 1/2 cup Balsamic vinegar
- 1/4 cup Extra virgin olive oil
- 1 tbsp Dijon mustard
- 2 tbsp Honey
- 1 large clove Garlic (minced)
- 1 tsp Salt
- 1/2 tsp Pepper
- 1 lb Flank steak
Salad Toppings
- 1 cup Cherry or grape tomatoes
- 8 oz Buffalo or fresh mozzarella
- 1/2 cup Fresh basil
Instructions
- Prepare the Marinade: Whisk together balsamic vinegar, olive oil, Dijon mustard, honey, minced garlic, salt, and pepper until the mixture is smooth and emulsified, creating a flavorful marinade.
- Marinate the Flank Steak: Place the flank steak in a shallow dish and pour half of the marinade over it, making sure it is fully covered. Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to penetrate the meat.
- Preheat the Grill: Heat your grill to medium-high heat, ensuring the grates are clean and oiled to prevent sticking.
- Grill the Steak: Remove the steak from the marinade, letting excess drip off. Grill the steak for 3 to 5 minutes on each side, depending on the thickness and your preferred level of doneness, aiming for a nice char exterior and juicy interior.
- Rest the Steak: Transfer the grilled steak to a cutting board and let it rest for 5 minutes. This helps redistribute juices, making the steak tender and flavorful when sliced.
- Cook the Cherry Tomatoes: While the steak rests, place the cherry tomatoes on the grill or in a skillet over medium-high heat. Cook for 3 to 5 minutes until the skins blister and soften, adding a smoky sweetness to the salad.
- Assemble the Caprese Steak: Slice the rested flank steak thinly against the grain. Arrange the slices on a serving platter, top with the blistered cherry tomatoes, torn or sliced fresh mozzarella, fresh basil leaves, and drizzle with the remaining half of the balsamic marinade to finish.
Notes
- Marinating the steak overnight intensifies the flavor and tenderizes the meat.
- Resting the steak after grilling ensures juicy, tender slices.
- You can substitute grape tomatoes if cherry tomatoes are unavailable.
- For a richer flavor, use buffalo mozzarella, but fresh mozzarella works perfectly as well.
- This dish pairs well with crusty bread or a light arugula salad.
