For the Overnight Oats:
- 1 ripe banana (mashed)
- 1/2 cup old-fashioned rolled oats
- 1/2 cup milk (dairy or non-dairy)
- 1/4 cup plain Greek yogurt
- 1 tablespoon maple syrup or honey
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- Pinch of nutmeg
- Pinch of salt
- 1 tablespoon chopped walnuts or pecans (optional)
- 1 tablespoon chia seeds (optional)
Instructions
- In a jar or airtight container, mash the ripe banana until mostly smooth.
- Add the oats, milk, Greek yogurt, maple syrup, vanilla extract, cinnamon, nutmeg, salt, chia seeds if using, and half of the nuts.
- Stir until well combined.
- Cover and refrigerate overnight, or for at least 4 hours.
- In the morning, stir the oats, add a splash of milk if needed to loosen the texture, and top with the remaining chopped nuts.
- Serve chilled or warm it briefly in the microwave if preferred.
Notes
- Use almond or oat milk for a dairy-free version.
- Add a spoonful of peanut butter for extra protein and flavor.
- Keeps well in the fridge for up to 3 days.
