  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted

For the filling:

  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup mashed ripe bananas (about 2)
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour

For the topping:

  • 1/2 cup chopped walnuts or pecans, toasted
  • 1/2 cup caramel sauce (store-bought or homemade)
  • Banana slices for garnish (optional)

Instructions

  1. Preheat oven: Preheat oven to 325°F (160°C). Wrap the outside of a 9-inch springform pan with foil and lightly grease the inside.
  2. Prepare crust: Mix graham cracker crumbs, sugar, and melted butter. Press into the pan and bake for 10 minutes. Set aside to cool.
  3. Make filling: Beat cream cheese until smooth. Add bananas, sugars, eggs, sour cream, vanilla, and flour. Mix until creamy.
  4. Fill and bake: Pour filling into crust. Bake in a water bath for 55–65 minutes until set. Cool in oven.
  5. Chill and serve: Refrigerate for 4 hours. Top with caramel, nuts, and bananas before serving.
