  • 2 1/2 cups whole milk
  • 4 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 1/2 teaspoons vanilla extract
  • 2 ripe bananas (sliced)

For the topping:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • extra banana slices for garnish (optional)

Instructions

  1. Preheat oven and prepare the crust: Combine graham cracker crumbs, sugar, and melted butter. Press into a pie dish and bake until set. Let cool.
  2. Make the filling: Whisk sugar, cornstarch, and salt in a saucepan. Gradually add milk and cook until thickened. Temper egg yolks, then combine with the milk mixture. Cook until thickened. Add butter and vanilla.
  3. Assemble the pie: Layer banana slices on the crust, pour custard filling over them, and chill for at least 4 hours.
  4. Prepare the topping and serve: Whip cream with sugar and vanilla until soft peaks form. Spread over the chilled pie and garnish with banana slices.
