Description

These Banana Pudding Cookies are a delightful twist on classic cookies, combining the flavors of banana pudding with the crunch of vanilla wafers and white chocolate chips. They are soft, chewy, and full of banana goodness!

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Mix-ins:

  • 1 cup white chocolate chips
  • 1 cup crushed vanilla wafer cookies
  • Optional: 1/2 cup chopped pecans or walnuts

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream butter and sugars: In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs and vanilla: Beat in the eggs one at a time, then mix in the vanilla extract.
  4. Combine dry ingredients: Add the dry pudding mix and beat until combined. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Combine wet and dry mixtures: Gradually add the dry ingredients to the wet mixture until just combined. Fold in white chocolate chips and crushed vanilla wafers, and nuts if desired.
  6. Bake: Use a cookie scoop to drop rounded balls of dough onto the baking sheets. Bake for 10 to 12 minutes until the edges are lightly golden but centers are still soft.
  7. Cool: Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
