Shrimp Mixture:

  • 1 pound cooked shrimp (peeled, deveined, and chopped)
  • 1/3 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha (adjust to taste)
  • 1 teaspoon honey
  • 1 teaspoon lime juice
  • 1/2 teaspoon garlic powder
  • 1/4 cup finely chopped green onions
  • 1/2 cup shredded mozzarella or pepper jack cheese

Other:

  • 4 large bell peppers (halved and seeds removed)
  • olive oil for brushing

Instructions

  1. Preheat oven: Preheat oven to 375°F.
  2. Prepare shrimp mixture: In a mixing bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, honey, lime juice, and garlic powder until smooth. Add the chopped shrimp, green onions, and shredded cheese. Mix until fully combined.
  3. Prepare peppers: Lightly brush the bell pepper halves with olive oil and place them cut side up in a baking dish.
  4. Stuff peppers: Spoon the shrimp mixture evenly into each pepper half.
  5. Bake: Cover loosely with foil and bake for 20 minutes. Remove the foil and bake for an additional 5–10 minutes, or until the peppers are tender and the filling is bubbly.
  6. Serve: Serve hot, garnished with extra green onions if desired.
