Chicken Skewers:
- 1.5 lbs boneless, skinless chicken thighs (cut into 1-inch pieces)
- 1/4 cup olive oil
- 3 cloves garlic (minced)
- 1/4 cup fresh basil (chopped)
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper

Garlicky Whipped Ricotta:
- 1 cup whole milk ricotta cheese
- 1 tablespoon olive oil
- 1 clove garlic (minced or grated)
- 1/2 teaspoon lemon zest
- salt and pepper to taste
Instructions
- Mix the Marinade: In a large bowl, combine olive oil, garlic, basil, lemon juice, salt, and pepper. Add chicken pieces and marinate for 30 minutes to 4 hours.
- Prepare Skewers: Thread marinated chicken onto skewers after soaking wooden skewers in water.
- Grill Chicken: Grill skewers for 10–12 minutes, turning occasionally, until cooked through and grill marks appear.
- Make Whipped Ricotta: Blend ricotta, olive oil, garlic, lemon zest, salt, and pepper in a food processor until smooth.
- Serve: Plate the grilled chicken skewers over whipped ricotta, garnish with basil and olive oil.
