Description

Chicken Skewers:

  • 1.5 lbs boneless, skinless chicken thighs (cut into 1-inch pieces)
  • 1/4 cup olive oil
  • 3 cloves garlic (minced)
  • 1/4 cup fresh basil (chopped)
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Garlicky Whipped Ricotta:

  • 1 cup whole milk ricotta cheese
  • 1 tablespoon olive oil
  • 1 clove garlic (minced or grated)
  • 1/2 teaspoon lemon zest
  • salt and pepper to taste

Instructions

  1. Mix the Marinade: In a large bowl, combine olive oil, garlic, basil, lemon juice, salt, and pepper. Add chicken pieces and marinate for 30 minutes to 4 hours.
  2. Prepare Skewers: Thread marinated chicken onto skewers after soaking wooden skewers in water.
  3. Grill Chicken: Grill skewers for 10–12 minutes, turning occasionally, until cooked through and grill marks appear.
  4. Make Whipped Ricotta: Blend ricotta, olive oil, garlic, lemon zest, salt, and pepper in a food processor until smooth.
  5. Serve: Plate the grilled chicken skewers over whipped ricotta, garnish with basil and olive oil.
