Ingredients
Scale
Chicken and Seasoning
- 1 tablespoon olive oil
- 2 large boneless, skinless chicken breasts
- Salt and pepper to taste
Salad Mixture
- 3/4 cup frozen corn, thawed
- 3/4 cup black beans, drained and rinsed
- 1/2 cup diced tomatoes
- 1/2 cup sharp cheddar cheese, shredded
Dressings and Wraps
- 1/2 cup barbecue sauce
- 1/2 cup ranch dressing
- 6 whole wheat tortillas
- Shredded romaine lettuce, as needed
Instructions
- Heat the oil: Warm 1 tablespoon of olive oil in a large skillet over medium-high heat, or spray the skillet with cooking spray for a lighter option.
- Cook the chicken: Season the chicken breasts evenly with salt and pepper. Place them in the hot skillet and cook for about 5 to 6 minutes on each side, or until fully cooked through. Once done, cover the chicken with foil and let it rest for a couple of minutes. After resting, dice the chicken into bite-sized pieces.
- Prepare the salad mixture: In a large bowl, combine the diced chicken, thawed corn, rinsed black beans, diced tomatoes, and shredded cheddar cheese. Drizzle the barbecue sauce and ranch dressing over the mixture. Toss everything gently but thoroughly until evenly coated with the dressings.
- Assemble the wraps: Lay out a whole wheat tortilla and place a desired amount of shredded romaine lettuce on top. Spoon a couple of large portions of the chicken salad mixture onto the lettuce. Roll the tortilla tightly around the filling to form a wrap and serve immediately.
Notes
- For a smoky flavor, you may grill the chicken breasts instead of cooking them in a skillet.
- Use cooking spray instead of olive oil to reduce fat content.
- Leftover wraps can be wrapped tightly in foil and refrigerated for up to 2 days.
- Feel free to add avocado slices or chopped cilantro for extra freshness.
- To make it spicier, add a dash of hot sauce or diced jalapeños to the salad mixture.
