  • 1 tablespoon olive oil
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 4 cups beef broth
  • 2 cups water
  • 1 (14.5 oz) can diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup elbow macaroni, uncooked
  • Chopped fresh parsley, for garnish (optional)

  1. Heat olive oil: In a large pot over medium heat, heat olive oil. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
  2. Cook onion and garlic: Add diced onion and minced garlic, cook until softened, about 2–3 minutes.
  3. Add broth and seasonings: Stir in beef broth, water, diced tomatoes, tomato sauce, tomato paste, Italian seasoning, paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Add macaroni: Add the uncooked macaroni and simmer for an additional 8–10 minutes, or until pasta is tender. Stir occasionally.
  5. Adjust seasoning and serve: Taste and adjust seasoning if necessary. Serve hot, garnished with chopped parsley if desired.

  • For a thicker soup, reduce the water slightly.
