Remaining Ingredients:

  • 2 cups red enchilada sauce, divided
  • 8 corn tortillas, cut in halves
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup sliced black olives (optional)
  • Chopped fresh cilantro for garnish (optional)

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
