Ingredients

Scale

For the Beef Filling:

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (4-ounce) can diced green chiles

For Assembly:

  • 1 (15-ounce) can red enchilada sauce
  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups shredded Monterey Jack cheese
  • 8 flour tortillas (8-inch)
  • Chopped cilantro and sour cream for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Cook the Beef: In a large skillet, heat olive oil over medium heat. Cook onion until softened, then add garlic. Add ground beef and cook until browned. Drain excess fat. Stir in cumin, chili powder, paprika, salt, pepper, green chiles, and 1/4 cup of enchilada sauce. Simmer to combine flavors.
  3. Assemble the Enchiladas: Spread 1/2 cup of enchilada sauce in a baking dish. Fill tortillas with beef mixture and cheese, roll up, and place seam-side down in the dish. Pour remaining sauce over the top and sprinkle with cheese.
  4. Bake: Cover with foil and bake for 20 minutes. Remove foil and bake for 10 more minutes until cheese is bubbly and golden.
  5. Serve: Garnish with cilantro and sour cream before serving.

Notes

  • You can use corn tortillas for a more traditional taste.
