For the Beef Filling:

  • 1 lb lean ground beef
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sriracha (optional)
  • 1/2 cup water chestnuts, chopped
  • 1/2 cup shredded carrots
  • 2 green onions, thinly sliced

For Serving:

  • 1 head butter lettuce or romaine, leaves separated and washed
  • Sesame seeds and chopped cilantro for garnish (optional)

Instructions

  1. In a large skillet over medium heat, heat the sesame oil. Add the garlic and ginger and cook for 1–2 minutes until fragrant.
  2. Add the ground beef and cook, breaking it up with a spoon, until browned and fully cooked, about 5–7 minutes. Drain excess grease if needed.
  3. Stir in the soy sauce, hoisin sauce, rice vinegar, and sriracha if using. Add the water chestnuts and shredded carrots, and cook for another 2–3 minutes until warmed through.
  4. Remove from heat and stir in the green onions. Spoon the beef mixture into individual lettuce leaves and garnish with sesame seeds and chopped cilantro if desired.
  5. Serve immediately.

Notes

  • For a low-carb version, use tamari or coconut aminos in place of soy sauce.
  • Swap ground beef for ground turkey or chicken for a lighter option.
