For the Beef Filling:
- 1 lb lean ground beef
- 1 tablespoon sesame oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 cup low-sodium soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sriracha (optional)
- 1/2 cup water chestnuts, chopped
- 1/2 cup shredded carrots
- 2 green onions, thinly sliced
For Serving:
- 1 head butter lettuce or romaine, leaves separated and washed
- Sesame seeds and chopped cilantro for garnish (optional)
Instructions
- In a large skillet over medium heat, heat the sesame oil. Add the garlic and ginger and cook for 1–2 minutes until fragrant.
- Add the ground beef and cook, breaking it up with a spoon, until browned and fully cooked, about 5–7 minutes. Drain excess grease if needed.
- Stir in the soy sauce, hoisin sauce, rice vinegar, and sriracha if using. Add the water chestnuts and shredded carrots, and cook for another 2–3 minutes until warmed through.
- Remove from heat and stir in the green onions. Spoon the beef mixture into individual lettuce leaves and garnish with sesame seeds and chopped cilantro if desired.
- Serve immediately.
Notes
- For a low-carb version, use tamari or coconut aminos in place of soy sauce.
- Swap ground beef for ground turkey or chicken for a lighter option.
- Add diced bell peppers or mushrooms for extra veggies.
