Main Ingredients:
- 2 tablespoons vegetable oil
- 2–3 tablespoons Massaman curry paste
- 1 1/2 pounds beef chuck roast, cut into 1-inch cubes
- 1 can (13.5 oz) full-fat coconut milk
Additional Ingredients:
- 1/2 cup beef broth or water
- 2 medium potatoes, peeled and cubed
- 1 small onion, chopped
- 1/4 cup roasted peanuts
- 1 cinnamon stick
- 2 bay leaves
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 tablespoon tamarind paste or juice (or substitute with lime juice)
- Cooked jasmine rice for serving
Instructions
- Heat Oil and Curry Paste: Heat oil in a large pot, add curry paste, and sauté until fragrant.
- Cook Beef: Add beef cubes, sear on all sides for 5–6 minutes.
- Add Ingredients: Pour in coconut milk and broth, add potatoes, onion, peanuts, cinnamon, and bay leaves. Simmer covered for 1 1/2 to 2 hours.
- Season: Stir in fish sauce, sugar, and tamarind paste. Simmer uncovered for 10 minutes.
- Serve: Remove cinnamon and bay leaves. Serve hot over jasmine rice.
Notes
- For a shortcut, use pre-cooked beef or leftover roast and simmer for a shorter time.
- Chicken or tofu can be substituted for beef.
- Adjust spice level by varying the amount of curry paste used.
