Ingredients
Seasoned Ground Beef:
1 pound ground beef, 1 tablespoon olive oil, 1 packet taco seasoning (or 2 tablespoons homemade), ½ cup water
Layering:
1 (13-ounce) bag tortilla chips, 1 ½ cups shredded cheddar cheese, 1 cup shredded Monterey Jack cheese, 1 (15-ounce) can refried beans (warmed)
Toppings:
½ cup diced tomatoes, ½ cup sliced black olives, ¼ cup diced red onion, ¼ cup sliced jalapeños, ¼ cup chopped green onions, ½ cup sour cream, ¼ cup chopped fresh cilantro (optional)
Instructions
- Preheat the oven: Preheat the oven to 375°F.
- Cook the beef: In a skillet, cook the ground beef with olive oil until browned. Add taco seasoning and water, simmer for 5 minutes.
- Layer the nachos: On a baking sheet, layer tortilla chips, beans, beef, and cheese. Repeat the layering.
- Bake: Bake for 10–12 minutes until cheese is melted.
- Add toppings: Top with tomatoes, olives, onions, jalapeños, green onions, sour cream, and cilantro. Serve hot.
Notes
- For extra heat, use pepper jack cheese or hot sauce.
- You can swap refried beans for black beans or pinto beans.
- Serve with guacamole, salsa, or queso on the side for dipping.
