For the beef stew:
- 2 pounds beef chuck roast (cut into 1-inch cubes)
- 3 tablespoons all-purpose flour
- 2 tablespoons olive oil
- 1 large yellow onion (chopped)
- 3 cloves garlic (minced)
- 4 cups beef broth
- 1 cup dry red wine (optional, can substitute with more broth)
- 3 large carrots (peeled and sliced)
- 3 medium potatoes (peeled and cubed)
- 2 stalks celery (sliced)
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Toss beef with flour: In a large bowl, toss the beef cubes with flour, salt, and pepper until lightly coated.
- Brown the beef: Heat olive oil in a large Dutch oven or heavy pot over medium-high heat. Brown the beef in batches until all sides are seared, then transfer to a plate.
- Cook onions and garlic: Add the chopped onion and cook until softened. Stir in the garlic and cook for another minute.
- Add remaining ingredients: Stir in tomato paste, then pour in the red wine. Add the beef back to the pot along with the beef broth, thyme, rosemary, and bay leaves.
- Simmer the stew: Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 hours. Add the carrots, potatoes, and celery, then continue to simmer uncovered for another 45 minutes.
- Season and serve: Remove bay leaves, season with salt and pepper, and garnish with fresh parsley before serving.
