For the cookies:
- 1/2 cup unsalted butter (softened)
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 3/4 cup creamy peanut butter
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F and line two baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2 minutes.
- Mix in the peanut butter, egg, and vanilla extract until smooth.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined.
- Scoop tablespoon-sized portions of dough and roll into balls. Place them on the prepared baking sheets about 2 inches apart.
- Use a fork to gently press a crisscross pattern into the tops.
- Bake for 9–11 minutes or until the edges are just set and the centers look slightly underdone.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Do not overbake—these cookies continue to set as they cool.
- For extra richness, stir in 1/2 cup chocolate chips or chopped peanuts.
