Main Salisbury Steak:

  • pounds ground beef (85/15)
  • ½ cup finely chopped onion
  • ⅓ cup plain breadcrumbs
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon ketchup
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil

Mushroom Gravy:

  • 2 tablespoons unsalted butter
  • 8 oz cremini or button mushrooms, sliced
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon fresh thyme leaves or ½ teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Prepare the Salisbury Steak: In a large bowl, combine ground beef, chopped onion, breadcrumbs, egg, Worcestershire sauce, ketchup, Dijon mustard, salt, and pepper. Shape into 4 oval patties.
  2. Cook the Patties: Brown the patties in olive oil in a skillet. Set aside.
  3. Make the Mushroom Gravy: Saute mushrooms, onions, and garlic. Add flour, beef broth, Worcestershire sauce, and thyme. Simmer until thickened.
  4. Combine and Simmer: Return patties to the skillet with gravy. Cover and simmer until cooked through.
