  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika (preferably Spanish pimentón)
  • ½ teaspoon hot paprika or cayenne pepper (adjust to taste)
  • 1 tablespoon tomato paste
  • ½ cup crushed tomatoes
  • 1 teaspoon red wine vinegar
  • ½ teaspoon sugar
  • Salt and black pepper to taste
  • ¼ cup water (as needed for consistency)

Instructions

  1. Heat the olive oil: In a small saucepan over medium heat, heat the olive oil.
  2. Sauté onion and garlic: Add the chopped onion and sauté until soft. Stir in garlic and cook for another minute.
  3. Add spices and tomato: Stir in smoked paprika, hot paprika or cayenne, and tomato paste. Cook for 1 minute.
  4. Simmer the sauce: Add crushed tomatoes, vinegar, sugar, salt, and pepper. Simmer for 10-15 minutes until thickened.
  5. Blend the sauce: Use an immersion blender or standard blender to blend the sauce until smooth.
  6. Serve: Let the sauce cool slightly before serving.
