- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika (preferably Spanish pimentón)
- ½ teaspoon hot paprika or cayenne pepper (adjust to taste)
- 1 tablespoon tomato paste
- ½ cup crushed tomatoes
- 1 teaspoon red wine vinegar
- ½ teaspoon sugar
- Salt and black pepper to taste
- ¼ cup water (as needed for consistency)
Instructions
- Heat the olive oil: In a small saucepan over medium heat, heat the olive oil.
- Sauté onion and garlic: Add the chopped onion and sauté until soft. Stir in garlic and cook for another minute.
- Add spices and tomato: Stir in smoked paprika, hot paprika or cayenne, and tomato paste. Cook for 1 minute.
- Simmer the sauce: Add crushed tomatoes, vinegar, sugar, salt, and pepper. Simmer for 10-15 minutes until thickened.
- Blend the sauce: Use an immersion blender or standard blender to blend the sauce until smooth.
- Serve: Let the sauce cool slightly before serving.
