Egg Mixture:

Filling:
- 1 cup cooked breakfast sausage (crumbled) or chopped bacon
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup chopped green onions
Additional:
- 8–10 small flour tortillas

Instructions
- Preheat the oven and prepare baking sheet: Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Prepare the egg mixture: Whisk together eggs, milk, salt, and pepper in a bowl.
- Cook the egg mixture: Scramble the eggs in a skillet until just set. Remove from heat and mix in cooked sausage or bacon, cheeses, and green onions.
- Assemble the taquitos: Warm tortillas, add filling, and roll tightly. Place on baking sheet seam-side down.
- Bake: Lightly oil the tops of the taquitos and bake for 12–15 minutes until golden and crisp.
- Serve: Enjoy warm with salsa, sour cream, or avocado.
