  • 1/2 cup shredded Monterey Jack cheese

Additional:

  • 8–10 small flour tortillas

Instructions

  1. Preheat the oven and prepare baking sheet: Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Prepare the egg mixture: Whisk together eggs, milk, salt, and pepper in a bowl.
  3. Cook the egg mixture: Scramble the eggs in a skillet until just set. Remove from heat and mix in cooked sausage or bacon, cheeses, and green onions.
  4. Assemble the taquitos: Warm tortillas, add filling, and roll tightly. Place on baking sheet seam-side down.
