Quinoa Mixture:
- 1 cup cooked quinoa
- 1 cup finely chopped steamed broccoli
- ¾ cup shredded cheddar cheese
- ¼ cup grated Parmesan cheese
- 2 large eggs
- ¼ cup breadcrumbs (or almond flour for gluten-free)
- 1 clove garlic (minced)
- ½ teaspoon onion powder
- Salt and pepper to taste
- Optional pinch of red pepper flakes
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and grease a mini muffin tin or line with silicone liners.
- Mix the ingredients: In a large bowl, combine the cooked quinoa, chopped broccoli, cheddar, Parmesan, eggs, breadcrumbs, garlic, onion powder, salt, pepper, and red pepper flakes if using. Mix until well combined.
- Fill the muffin cups: Scoop about 1 heaping tablespoon of the mixture into each muffin cup and press down slightly to compact.
- Bake: Bake for 15–18 minutes or until golden and set.
- Cool and serve: Let cool in the tin for a few minutes before removing. Serve warm or at room temperature.
