Description

Quinoa Mixture:

  • 1 cup cooked quinoa
  • 1 cup finely chopped steamed broccoli
  • ¾ cup shredded cheddar cheese
  • ¼ cup grated Parmesan cheese
  • 2 large eggs
  • ¼ cup breadcrumbs (or almond flour for gluten-free)
  • 1 clove garlic (minced)
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • Optional pinch of red pepper flakes

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and grease a mini muffin tin or line with silicone liners.
  2. Mix the ingredients: In a large bowl, combine the cooked quinoa, chopped broccoli, cheddar, Parmesan, eggs, breadcrumbs, garlic, onion powder, salt, pepper, and red pepper flakes if using. Mix until well combined.
  3. Fill the muffin cups: Scoop about 1 heaping tablespoon of the mixture into each muffin cup and press down slightly to compact.
  4. Bake: Bake for 15–18 minutes or until golden and set.
  5. Cool and serve: Let cool in the tin for a few minutes before removing. Serve warm or at room temperature.
