For the Cookies:
- 1/2 cup (1 stick) unsalted butter, browned and slightly cooled
- 1/4 cup pure maple syrup
- 1/2 cup packed brown sugar
- 1/4 cup granulated sugar
- 1/3 cup canned pumpkin purée
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/8 teaspoon ground cloves
- Optional: coarse sugar for topping
Instructions
- Brown the Butter: In a saucepan over medium heat, melt the butter and cook until it begins to brown and smell nutty. Remove from heat and let cool for 10–15 minutes.
- Mix Wet Ingredients: In a large bowl, whisk together the browned butter, maple syrup, brown sugar, and granulated sugar until smooth. Add the pumpkin purée, egg yolk, and vanilla extract; mix until fully combined.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves. Add the dry ingredients to the wet and stir until a soft dough forms.
- Chill and Bake: Cover and chill the dough for at least 30 minutes. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper. Scoop tablespoon-sized balls of dough onto the baking sheets, spacing them about 2 inches apart. Sprinkle with coarse sugar if desired. Bake for 10–12 minutes or until the edges are set and centers look slightly underdone. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
