  • 1 tablespoon cornstarch

  • 1 teaspoon grated fresh ginger (optional)

  • Chopped green onions
  • Sesame seeds

Instructions

  1. Season the chicken: Season the chicken breasts with salt, pepper, and garlic powder.
  2. Sear the chicken: Heat olive oil in a large skillet over medium heat. Sear the chicken for 3–4 minutes on each side until golden brown.
  3. Make the sauce: In a bowl, whisk together the reserved pineapple juice, brown sugar, soy sauce, and grated ginger if using. Pour the mixture over the chicken in the skillet. Add the pineapple chunks.
  4. Cook the chicken: Cover and simmer over medium-low heat for 15–20 minutes, or until the chicken is cooked through and tender.
  5. Thicken the sauce: In a small bowl, mix cornstarch and water to make a slurry. Stir it into the sauce during the last 5 minutes of cooking to thicken.
  6. Serve: Once the sauce is thick and glossy, remove from heat. Serve chicken topped with pineapple and sauce. Garnish with green onions and sesame seeds if desired.
