Description

Indulge in the ultimate dessert mashup with these Brownie Stuffed Chocolate Chip Cookies. A soft and chewy chocolate chip cookie envelopes a gooey brownie center, creating a decadent treat that is sure to satisfy any sweet tooth.

Ingredients

Scale

For the Chocolate Chip Cookie Dough:

  • 1½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips

For the Brownie Filling:

  • 12 baked brownie squares (bite-sized, about 1-inch pieces, cooled)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Prepare the Cookie Dough: In a medium bowl, whisk together the flour, baking soda, and salt. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. Gradually stir the dry ingredients into the wet ingredients until a dough forms. Fold in the chocolate chips.
  3. Stuff the Cookies: Scoop about 2 tablespoons of cookie dough and flatten it into a disk. Place a brownie square in the center, then wrap the dough around it, sealing the edges completely to enclose the brownie. Repeat with remaining dough and brownies.
  4. Bake: Place stuffed dough balls on the prepared baking sheet, spacing them at least 2 inches apart. Bake for 12–14 minutes, or until the edges are golden and the centers are set.
  5. Cool and Serve: Let cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • Use leftover homemade brownies or store-bought mini brownies for convenience.
  • For a gooier center, slightly underbake the brownies before stuffing.
  • These cookies are best enjoyed warm but can be reheated for 10 seconds in the microwave.
