  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil

For the Bruschetta Topping:

  • 2 cups cherry tomatoes, diced
  • 2 cloves garlic, minced
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • ¼ cup chopped fresh basil
  • Salt and pepper to taste

Optional Toppings:

  • ½ cup shredded mozzarella or shaved Parmesan cheese
  • Balsamic glaze for drizzling

Instructions

  1. Preheat the Grill: Preheat grill or grill pan to medium-high heat.
  2. Rub chicken breasts with olive oil, Italian seasoning, garlic powder, salt, and pepper. Grill for 5–6 minutes per side, or until the internal temperature reaches 165°F (74°C) and chicken is cooked through.

  3. Prepare the Bruschetta Topping: While the chicken cooks, combine diced cherry tomatoes, minced garlic, balsamic vinegar, olive oil, chopped basil, salt, and pepper in a bowl. Let sit for 10 minutes to allow flavors to blend.
  4. Top the Chicken: Once chicken is cooked, top each piece with the bruschetta mixture. Add mozzarella or Parmesan if desired and let melt slightly.
  5. Serve: Drizzle with balsamic glaze before serving and garnish with extra basil. Serve hot.
