  • 1 can (15 oz) chickpeas (drained and rinsed)
  • 1/4 cup buffalo sauce
  • 2 tablespoons tahini
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic (minced)
  • 1/4 teaspoon smoked paprika
  • Salt to taste
  • 12 tablespoons water (as needed for consistency)

Garnish:

  • Chopped parsley
  • Crumbled blue cheese (optional)

Instructions

  1. Blend Ingredients: In a food processor, combine chickpeas, buffalo sauce, tahini, olive oil, lemon juice, garlic, smoked paprika, and a pinch of salt. Blend until smooth, scraping down the sides as needed.
  2. Adjust Consistency: Add water a tablespoon at a time to reach your desired consistency.
  3. Season to Taste: Taste and adjust seasoning or heat level with more buffalo sauce if desired.
  4. Serve: Transfer to a serving bowl and garnish with chopped parsley and crumbled blue cheese, if using. Serve with pita chips, celery sticks, carrots, or cucumber slices.
