Description

Busy Day Soup is a hearty and comforting dish perfect for quick family meals. This easy-to-make soup is a one-pot wonder that combines ground beef or turkey with a variety of vegetables and savory seasonings.

Ground Beef Mixture:

  • 1 pound ground beef or ground turkey
  • 1 medium onion, diced
  • 3 cloves garlic, minced

Soup Base:

  • 4 cups beef broth or chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) tomato sauce
  • 1 can (15 ounces) mixed vegetables, drained
  • 1 can (15 ounces) kidney beans, rinsed and drained
  • 2 medium potatoes, diced
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika

Optional Garnish:

  • Shredded cheese or fresh parsley

Instructions

  1. Brown the Ground Beef: In a large pot or Dutch oven, brown the ground beef with the onion over medium-high heat until no longer pink, about 6–7 minutes. Drain excess fat if needed.
  2. Add Ingredients: Add the garlic and cook for 1 minute until fragrant. Stir in the broth, diced tomatoes, tomato sauce, mixed vegetables, beans, potatoes, Italian seasoning, salt, pepper, and smoked paprika.
  3. Simmer: Bring to a boil, then reduce heat to low. Cover and simmer for 25–30 minutes, or until the potatoes are tender.
  4. Adjust Seasoning and Serve: Taste and adjust seasoning as needed. Serve hot with crackers or bread on the side.

Notes

  • This is a flexible, “clean out the pantry” soup—swap in different canned beans, frozen veggies, or broth depending on what you have.
