Ingredients
Scale
Ground Beef Mixture:
- 1 pound ground beef or ground turkey
- 1 medium onion, diced
- 3 cloves garlic, minced
Soup Base:
- 4 cups beef broth or chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 1 can (15 ounces) tomato sauce
- 1 can (15 ounces) mixed vegetables, drained
- 1 can (15 ounces) kidney beans, rinsed and drained
- 2 medium potatoes, diced
- 2 teaspoons Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
Optional Garnish:
- Shredded cheese or fresh parsley
Instructions
- Brown the Ground Beef: In a large pot or Dutch oven, brown the ground beef with the onion over medium-high heat until no longer pink, about 6–7 minutes. Drain excess fat if needed.
- Add Ingredients: Add the garlic and cook for 1 minute until fragrant. Stir in the broth, diced tomatoes, tomato sauce, mixed vegetables, beans, potatoes, Italian seasoning, salt, pepper, and smoked paprika.
- Simmer: Bring to a boil, then reduce heat to low. Cover and simmer for 25–30 minutes, or until the potatoes are tender.
- Adjust Seasoning and Serve: Taste and adjust seasoning as needed. Serve hot with crackers or bread on the side.
Notes
- This is a flexible, “clean out the pantry” soup—swap in different canned beans, frozen veggies, or broth depending on what you have.
- Leftovers keep well in the fridge for 3–4 days and freeze beautifully for up to 3 months.
