Ingredients
Scale
Rice and Liquid
- 2 cups long grain white rice
- 4 cups water or chicken broth
- 1 teaspoon salt
Flavorings and Add-ins
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 cup corn kernels (fresh, frozen, or canned and drained)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
- 2 tablespoons grated Parmesan cheese (optional)
Instructions
- Rinse the Rice: Rinse the rice under cold water until the water runs clear to remove excess starch for fluffier rice.
- Cook the Rice: In a medium saucepan, combine the rinsed rice, water or chicken broth, and salt. Bring the mixture to a boil over medium-high heat, then reduce heat to low, cover it with a lid, and simmer for 15 to 18 minutes until the rice is tender and all the liquid is absorbed.
- Rest the Rice: Remove the saucepan from heat and let the rice sit, covered, for 5 minutes to finish steaming and fully absorb moisture.
- Sauté the Corn: While the rice rests, heat the butter and olive oil together in a large skillet over medium heat. Add the corn kernels and cook for 3 to 4 minutes until heated through and slightly tender.
- Season the Corn: Stir in the garlic powder and black pepper into the corn, mixing well to distribute the flavors evenly.
- Combine Rice and Corn: Add the cooked rice to the skillet with the corn and gently fluff and mix everything together with a spatula so the rice is well coated with the buttery corn mixture.
- Add Fresh Herbs and Cheese: Stir in the chopped fresh parsley and, if using, the grated Parmesan cheese for an extra layer of flavor and richness.
- Adjust Seasoning and Serve: Taste the buttered corn rice and season with additional salt or pepper if needed. Serve the dish warm as a delicious side to your favorite meals.
Notes
- Use chicken broth instead of water for a richer, savory flavor.
- Fresh corn kernels provide the sweetest taste, but frozen corn is a convenient alternative year-round.
- For a creamier texture and intensified buttery taste, add an extra tablespoon of butter just before serving.
