- 1 unbaked 9-inch pie crust (store-bought or homemade)
Filling:
- 1 1/2 cups mashed cooked sweet potatoes (about 2 medium sweet potatoes)
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 3 large eggs
- 3/4 cup buttermilk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C).
- Mix the filling: In a large bowl, combine the sweet potatoes and melted butter. Add sugars, eggs, buttermilk, vanilla, spices, and salt. Mix until smooth.
- Fill the crust: Pour the filling into the unbaked pie crust and smooth the top.
- Bake: Bake for 50–60 minutes until set. Cover edges with foil if browning too quickly.
- Cool and serve: Let the pie cool completely before slicing. Serve at room temperature or chilled, topped with whipped cream if desired.
Notes
- For best flavor, roast the sweet potatoes instead of boiling.
- The pie can be made a day ahead and refrigerated. Bring to room temperature before serving.
