For the Soup:
- 1 tablespoon olive oil
- 1 pound ground beef or ground turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 cups chopped green cabbage
- 2 carrots, peeled and sliced
- 1 can (14.5 ounces) diced tomatoes
- 1 can (8 ounces) tomato sauce
- 4 cups beef or vegetable broth
- ½ cup uncooked white rice
- 1 tablespoon Worcestershire sauce
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 bay leaf
Instructions
- Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
- Add onion and garlic, cooking until softened, about 2–3 minutes.
- Stir in chopped cabbage, carrots, diced tomatoes, tomato sauce, broth, rice, Worcestershire sauce, paprika, oregano, salt, pepper, and bay leaf. Bring to a boil, then reduce heat and simmer uncovered for 25–30 minutes, or until rice is cooked and cabbage is tender.
- Remove bay leaf before serving. Taste and adjust seasoning if needed.
Notes
- For a lower-carb version, substitute cauliflower rice.
- This soup freezes well—let it cool completely before storing in freezer-safe containers.
- You can also use brown rice, but increase the cooking time accordingly.
