Description

This hearty Cabbage Roll Soup is a comforting and flavorful twist on traditional stuffed cabbage rolls. Packed with ground beef (or turkey), vegetables, and savory seasonings, it’s a satisfying meal perfect for chilly days.

For the Soup:

  • 1 tablespoon olive oil
  • 1 pound ground beef or ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 cups chopped green cabbage
  • 2 carrots, peeled and sliced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (8 ounces) tomato sauce
  • 4 cups beef or vegetable broth
  • ½ cup uncooked white rice
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 bay leaf


Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
  2. Add onion and garlic, cooking until softened, about 2–3 minutes.
  3. Stir in chopped cabbage, carrots, diced tomatoes, tomato sauce, broth, rice, Worcestershire sauce, paprika, oregano, salt, pepper, and bay leaf. Bring to a boil, then reduce heat and simmer uncovered for 25–30 minutes, or until rice is cooked and cabbage is tender.
  4. Remove bay leaf before serving. Taste and adjust seasoning if needed.

Notes

  • For a lower-carb version, substitute cauliflower rice.
  • This soup freezes well—let it cool completely before storing in freezer-safe containers.
  • You can also use brown rice, but increase the cooking time accordingly.
