  • 1 tablespoon olive oil
  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces

Vegetables:

  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced

Canned Ingredients:

  • 1 (15-ounce) can diced tomatoes
  • 1 (15-ounce) can tomato sauce
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can black beans, drained and rinsed

Additional:

  • 1 cup chicken broth
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Chopped green onions and shredded cheese for garnish

Instructions

  1. Heat Olive Oil: In a large pot or Dutch oven, heat olive oil over medium heat.
  2. Cook Chicken: Add the chicken pieces and cook for 4–5 minutes until browned. Remove from the pot and set aside.
  3. Sauté Vegetables: In the same pot, add the diced onion and bell peppers and sauté for 5–6 minutes until softened. Stir in the garlic and cook for 1 more minute until fragrant.
  4. Combine Ingredients: Return the chicken to the pot and add the diced tomatoes, tomato sauce, kidney beans, black beans, chicken broth, Cajun seasoning, smoked paprika, cayenne (if using), salt, and pepper. Stir well and bring to a simmer.
  5. Cook Chili: Cover and cook for 20–25 minutes, stirring occasionally, until the chicken is cooked through and the chili is thickened.
  6. Serve: Serve hot, garnished with chopped green onions and shredded cheese.

Notes

  • Adjust spice level by increasing or omitting the cayenne pepper.
