- Preheat oven and cook chicken: Preheat the oven to 400°F (200°C). While the oven heats, cook the lean ground chicken in a sauté pan over medium-high heat until it is fully cooked and no longer pink, breaking it apart as it cooks.
- Add vegetables and seasonings: To the cooked chicken, add the drained canned corn, diced red onions, condensed cream of chicken soup, Cajun seasoning, onion powder, salt, and pepper. Stir well to combine all ingredients and continue cooking for about 3 minutes to allow flavors to meld.
