- Sauté Vegetables: In a large soup pot, heat the butter and olive oil. Sauté onion, bell pepper, and celery until softened. Add garlic.

- Cook Potatoes: Add potatoes, Cajun seasoning, paprika, salt, and pepper. Simmer until potatoes are tender.
- Thicken Soup: Mash some potatoes for texture. Stir in cream, sour cream, and cheddar until melted.
- Adjust: Taste and season as needed. Serve hot with toppings.

- For added spice, increase Cajun seasoning or add cayenne.
