Instructions

  1. Sauté Vegetables: In a large soup pot, heat the butter and olive oil. Sauté onion, bell pepper, and celery until softened. Add garlic.
  2. Create Roux: Sprinkle in flour and stir to form a roux. Whisk in broth until smooth.
  3. Cook Potatoes: Add potatoes, Cajun seasoning, paprika, salt, and pepper. Simmer until potatoes are tender.
  4. Thicken Soup: Mash some potatoes for texture. Stir in cream, sour cream, and cheddar until melted.
