Instructions
- Brown Sausage: Heat vegetable oil in a large pot over medium heat. Add the sliced andouille sausage and cook until browned, about 3-4 minutes. Once browned, remove the sausage from the pot and set it aside.
- Sauté Vegetables: In the same pot, add the diced onion, celery, and red bell pepper. Cook these vegetables until they are softened, which will take about 5-8 minutes. Then, stir in the minced garlic and cook for an additional minute to release its flavor.
- Simmer Soup: Add the Cajun seasoning, kosher salt, black pepper, paprika, cayenne pepper, chicken broth, and cubed potatoes to the pot. Bring the mixture to a simmer and cook for 20-25 minutes, or until the potatoes become tender and easily pierced with a fork.
- Finish and Serve: Return the browned sausage to the pot. Stir in the heavy whipping cream and shredded mild cheddar cheese. Let the soup simmer for another 5 minutes, or until heated through and the cheese has melted completely. Garnish the soup with freshly chopped parsley and serve warm for a comforting meal.
