Pasta:

  • 12 ounces rigatoni pasta

Salmon:

  • 1 pound skinless salmon fillet, cut into chunks

Seasoning:

  • 2 tablespoons Cajun seasoning (divided)

Sauce:

  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup cherry tomatoes, halved
  • 1/4 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Chopped parsley or green onions for garnish

Instructions

  1. Cook the Rigatoni: Boil rigatoni until al dente, then set aside.
  2. Cook the Salmon: Season and cook salmon until golden, then remove from skillet.
  3. Make the Sauce: Sauté garlic, add seasoning and tomatoes, pour in cream and broth, then simmer.
  4. Combine: Stir in Parmesan and rigatoni, adjust consistency with pasta water if needed. Add salmon back to the skillet.
  5. Finish and Serve: Season to taste, garnish, and serve hot.
