Pasta:
- 12 ounces rigatoni pasta
Salmon:
- 1 pound skinless salmon fillet, cut into chunks
Seasoning:
- 2 tablespoons Cajun seasoning (divided)
Sauce:
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken or vegetable broth
- 1/2 cup grated Parmesan cheese
- 1/2 cup cherry tomatoes, halved
- 1/4 teaspoon smoked paprika
- Salt and black pepper to taste
- Chopped parsley or green onions for garnish
Instructions
- Cook the Rigatoni: Boil rigatoni until al dente, then set aside.
- Cook the Salmon: Season and cook salmon until golden, then remove from skillet.
- Make the Sauce: Sauté garlic, add seasoning and tomatoes, pour in cream and broth, then simmer.
- Combine: Stir in Parmesan and rigatoni, adjust consistency with pasta water if needed. Add salmon back to the skillet.
- Finish and Serve: Season to taste, garnish, and serve hot.

- You can use pre-cooked or canned salmon for a quicker version.
