  • 1 tablespoon olive oil
  • 12 ounces smoked sausage (such as andouille or kielbasa), sliced into rounds
  • 1 small onion, diced
  • 1 bell pepper (any color), diced
  • 2 cloves garlic, minced
  • 1 cup long grain white rice, uncooked
  • 2 cups chicken broth
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon paprika
  • ¼ teaspoon dried thyme
  • ¼ teaspoon black pepper
  • Salt to taste
  • Chopped green onions or parsley, for garnish

Instructions

  1. Heat the oil and brown the sausage: Heat olive oil in a large skillet. Add sliced sausage, cook until browned, then set aside.
  2. Sauté vegetables: In the same skillet, sauté onion and bell pepper until softened. Add garlic and cook briefly.
  3. Add rice and seasonings: Stir in uncooked rice, toast briefly. Return sausage to skillet, add broth, diced tomatoes, Cajun seasoning, paprika, thyme, and black pepper. Stir well.
  4. Simmer: Bring to a boil, then reduce heat, cover, and simmer for 18–20 minutes until rice is tender.
  5. Finish and serve: Remove from heat, let sit, fluff with a fork, garnish with green onions or parsley.
