Ingredients
Scale
Sausage and Vegetables
- 1 lb Andouille sausage, sliced into rounds
- 1 cup bell peppers, diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1/4 cup green onions, sliced (for garnish)
Base and Seasoning
- 1 cup long-grain rice, uncooked
- 1 can (14.5 oz) diced tomatoes, drained
- 2 tablespoons Cajun seasoning
- 2 cups chicken broth
- 1 tablespoon olive oil
- Salt and pepper, to taste
Instructions
- Gather Ingredients: Assemble all ingredients listed to ensure a smooth cooking process with everything at hand.
- Brown Sausage: Heat olive oil in a large skillet over medium heat. Add the sliced Andouille sausage and cook for 5-7 minutes, stirring occasionally, until browned and flavorful.
- Sauté Vegetables: Add the diced onion and bell peppers to the skillet with the sausage. Sauté for 3-4 minutes until vegetables are softened. Then add the minced garlic and cook for another minute until fragrant.
- Toast Rice: Stir in the uncooked long-grain rice to the skillet. Toast the rice for 1-2 minutes while stirring to coat it in the flavorful oils and lightly brown the grains.
- Add Remaining Ingredients: Return the sausage to the skillet if it was moved aside. Add the drained diced tomatoes, Cajun seasoning, chicken broth, and season with salt and pepper. Mix everything well to combine.
- Simmer: Bring the mixture to a boil, then reduce heat to low. Cover the skillet with a lid and let it simmer gently for 20-25 minutes, or until the rice is tender and has absorbed the liquid.
- Finish and Serve: Once the rice is cooked, fluff it with a fork to separate the grains. Garnish with the sliced green onions and serve hot.
Notes
- You can substitute Andouille sausage with smoked kielbasa or chorizo for a different flavor profile.
- Adjust the Cajun seasoning amount according to your spice preference.
- Use low-sodium chicken broth to control salt content if desired.
- For a vegetarian version, omit sausage and use vegetable broth, adding extra vegetables like mushrooms or zucchini.
