- 1½ cups (200g) finely ground almonds (almond flour)
- 1 cup (200g) dark chocolate, chopped
- ½ cup (115g) unsalted butter
- ¾ cup (150g) granulated sugar
- 4 large eggs, separated
- 1 teaspoon vanilla extract
- ¼ teaspoon salt

Instructions
- Preheat the Oven: Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan. Line the bottom with parchment paper.
- Melt Chocolate and Butter: Melt the dark chocolate and butter together in a heatproof bowl set over a pot of simmering water. Stir until smooth. Remove from heat and let cool slightly.
- Prepare Batter: In a large bowl, whisk together egg yolks, sugar, and vanilla until light and creamy. Slowly stir in the melted chocolate mixture, then fold in the ground almonds.
- Beat Egg Whites: In a separate bowl, beat the egg whites with salt until stiff peaks form. Gently fold the egg whites into the chocolate-almond mixture in batches.
- Bake: Pour the batter into the prepared pan and bake for 35–40 minutes until a toothpick inserted into the center comes out with moist crumbs.
- Cool and Serve: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar before serving, if desired.
