  • 1 cup (200g) dark chocolate, chopped
  • ½ cup (115g) unsalted butter
  • ¾ cup (150g) granulated sugar
  • 4 large eggs, separated
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • powdered sugar for dusting (optional)


Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan. Line the bottom with parchment paper.
  2. Melt Chocolate and Butter: Melt the dark chocolate and butter together in a heatproof bowl set over a pot of simmering water. Stir until smooth. Remove from heat and let cool slightly.
  3. Prepare Batter: In a large bowl, whisk together egg yolks, sugar, and vanilla until light and creamy. Slowly stir in the melted chocolate mixture, then fold in the ground almonds.
  4. Beat Egg Whites: In a separate bowl, beat the egg whites with salt until stiff peaks form. Gently fold the egg whites into the chocolate-almond mixture in batches.
  5. Bake: Pour the batter into the prepared pan and bake for 35–40 minutes until a toothpick inserted into the center comes out with moist crumbs.
  6. Cool and Serve: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar before serving, if desired.
