For the Curry:
- 2 pounds beef stew meat, cut into 1 1/2-inch cubes
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 3 tablespoons Caribbean curry powder
- 1 teaspoon ground allspice
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper, optional
- 2 tablespoons tomato paste
- 3 cups beef broth
- 1 (14-ounce) can coconut milk
- 4 medium potatoes, peeled and cut into chunks
- 2 carrots, sliced
- 1 scotch bonnet pepper, left whole and pierced (optional)
- 2 teaspoons salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh cilantro, chopped for garnish
Instructions
- Brown the Beef: Heat oil in a large pot, brown beef cubes, and set aside.
- Sauté Aromatics: In the same pot, sauté onion, garlic, and ginger until fragrant.
- Add Spices: Stir in curry powder, allspice, paprika, and cayenne.
- Cook Curry: Add tomato paste, return beef to pot, pour in broth and coconut milk, bring to a boil, then simmer.
- Add Vegetables: Add potatoes, carrots, scotch bonnet, salt, and pepper, simmer until vegetables are tender.
- Finish and Serve: Remove scotch bonnet, garnish with cilantro, and serve with rice or roti.
Notes
- For a milder dish, omit the scotch bonnet or substitute with a jalapeño.
- This curry tastes better the next day as flavors develop.
