  • 2 pounds beef stew meat, cut into 1 1/2-inch cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons Caribbean curry powder
  • 1 teaspoon ground allspice
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper, optional
  • 2 tablespoons tomato paste
  • 3 cups beef broth
  • 1 (14-ounce) can coconut milk
  • 4 medium potatoes, peeled and cut into chunks
  • 2 carrots, sliced
  • 1 scotch bonnet pepper, left whole and pierced (optional)
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped for garnish

Instructions

  1. Brown the Beef: Heat oil in a large pot, brown beef cubes, and set aside.
  2. Sauté Aromatics: In the same pot, sauté onion, garlic, and ginger until fragrant.
  3. Add Spices: Stir in curry powder, allspice, paprika, and cayenne.
  4. Cook Curry: Add tomato paste, return beef to pot, pour in broth and coconut milk, bring to a boil, then simmer.
  5. Add Vegetables: Add potatoes, carrots, scotch bonnet, salt, and pepper, simmer until vegetables are tender.
  6. Finish and Serve: Remove scotch bonnet, garnish with cilantro, and serve with rice or roti.

Notes

  • For a milder dish, omit the scotch bonnet or substitute with a jalapeño.
  • This curry tastes better the next day as flavors develop.
