A comforting and flavorful Tex-Mex beef stew known as Carne Guisada. Tender chunks of beef simmered in a rich tomato-based sauce with peppers and spices, perfect for serving with warm tortillas, rice, or beans.

Beef Stew:
- 2 pounds beef stew meat (chuck or round, cut into 1-inch cubes)
- 1 tablespoon vegetable oil
- 1 small onion (chopped)
- 1 green bell pepper (chopped)
- 2 cloves garlic (minced)
- 2 tablespoons all-purpose flour
Sauce:
- 1 cup beef broth
- 1/2 cup tomato sauce
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt (more to taste)
- 1/4 teaspoon black pepper
Instructions
- Prepare Beef: Heat vegetable oil in a large skillet or Dutch oven over medium-high heat. Brown the beef on all sides, working in batches if needed. Set aside.
- Sauté Vegetables: In the same pan, sauté onion, bell pepper, and garlic until softened, about 3-4 minutes. Sprinkle in flour and cook for an additional 1-2 minutes.
- Cook Stew: Return beef to the pan, add beef broth, tomato sauce, cumin, chili powder, paprika, salt, and pepper. Bring to a boil, then simmer covered on low heat for 1 1/2 to 2 hours, stirring occasionally.
- Adjust Seasoning and Serve: Adjust seasoning if needed. Serve the Carne Guisada with tortillas, rice, or beans.
Notes
- For a spicier version, add a chopped jalapeño or hot sauce.
- You can substitute beer for part of the broth for added flavor depth.
- Leftovers taste even better the next day!
