- 2 tablespoons vegetable oil
Vegetable Mix:
- 1 small yellow onion (chopped)
- 1 green bell pepper (chopped)
- 3 cloves garlic (minced)
Seasonings and Broth:
- 2 tablespoons all-purpose flour
- 1 tablespoon tomato paste
- 2 cups beef broth
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Serving:
- Warm flour tortillas (for serving)
- Chopped fresh cilantro (optional)
Instructions
- Brown the Beef: Heat vegetable oil in a large pot, sear beef cubes until browned, then set aside.
- Saute Vegetables: In the same pot, cook onion, bell pepper until softened. Add garlic, flour, tomato paste, and cook.
- Add Seasonings and Broth: Stir in beef broth, cumin, chili powder, paprika, oregano, salt, and pepper. Return beef to the pot and simmer.
- Cook Slowly: Cover and cook on low heat for 2 to 2.5 hours until beef is tender and gravy thickens.
- Serve: Serve hot with warm tortillas, garnish with cilantro.
