  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups finely grated carrots
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts or pecans (optional)

For the frosting:

  • 8 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C) and prepare a 9×13-inch baking pan.
  2. Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Prepare batter: In a large bowl, whisk eggs, oil, sugars, and vanilla. Fold in carrots, pineapple, and nuts. Add dry ingredients and mix.
  4. Bake: Spread batter in the pan and bake for 25–30 minutes. Let cool.
  5. Make frosting: Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beat until fluffy.
  6. Frost and serve: Spread frosting over cooled bars and cut into squares.
